    Meal Break Compensation

Should I compensate an employee in arears?
I have discovered that a supervising Nurse employee has been skipping lunch breaks and/or not clocking out for meal breaks, and also eats in her station where she is likely to be interrupted. Despite being counseled to clock out and take a legal meal break, she continues to operate this way. Since she is in charge of this area and does not have a relief nurse (Dr. covers for her while seeing other patients), must I now compensate her for the lunch breaks she did not document, and how far back much I check?
    Thanks for any insight.
